Heavenly Hamantashen - What you’ll need…
For the dough -
3/4 cup unsalted butter, room temperature
2/3 cup sugar
1 large egg, room temperature
1 tsp vanilla
1 tsp grated orange zest
2 1/4 cups flour
1/4 tsp salt
1-5 tsp water (if needed
For the filling -
Apricot Jam
Chocolate chips
Poppy seed filling (look for it in the baking section of the supermarket)
Nutella
S’mores
Whatever your can dream up!
Tools -
Large Mixing Bowl
Measuring spoons
Hand or Stand Mixer
Rolling Pin
Round Cookie Cutter or Biscuit Cutter
Baking Sheet
Steps-
Cube the butter (ideally room temperature) and add it large mixing bowl.
Add sugar and used handheld mixer to combine.
Add egg, vanilla, and orange zest, mix to combine.
Add flour and salt. Mix until dough becomes a shaggy mess.
Turn out onto work surface and knead until dough comes together. If you dough is too dry, add 1 tsp of water at a time.
Wrap dough in plastic wrap and let sit in refrigerator for at least 30 minutes. Ideally let it rest for 3 hours before moving on to the next step.
About 30 minutes prior to shaping and baking, remove dough from the refrigerator.
Preheat oven to 350 degrees.
Line baking sheets with parchment paper.
Unwrap dough and place on a lightly floured work surface.
Using a rolling pin, roll dough until it’s approximate 1/4 inch thick.
Turn dough over.
Using a 3 inch cookie cutter, cut dough into discs and place on lined baking sheet.
Keep shaping and rolling dough until you’ve filled your baking sheet or run out of dough.
Add 1/2 tsp of filling to the center of each disc.
Gently fold the circle into a triangle, pinching the corners to form a seal.
Once all cookies are formed, put in oven and bake for 10-25 minutes, until cookies are golden brown.
